Bachelor Pad Cooking: Broiled Chicken w/ Basil Mayonnaise

My name is Mike Vosters, a 20-something techie living in NYC. After years of eating peanut butter and jelly, pop tarts, and other garbage I decided to get my life together and start cooking in 2012.

With the help of my friend Nicole, I put procrastination aside and started swiping through the entree recipes on Trufflehead - a cooking app for iPhone and iPad. The photos all looked good, but I decided to make Broiled Chicken w/ Basil Mayonnaise my first victim because I was starving and it looked filling.

It was around 7:30pm when Nicole and I embarked on our epic journey to the grocery store. While she navigated the aisles like a pro, I trailed behind looking like a deer in the headlights - confused and scared. What in the world is all this food for? Why would anyone need this many choices of mayonnaise?

About 20 minutes later, we were headed back to the house w/ everything we needed to make the chicken, plus pita and hummus for appetizers, sweet potatoes for our side dish, wine, and fudge rounds for dessert (C’mon, you didn’t think I’d go cold turkey on pre-packaged treats did you?).

All that cost $42 in total - subtract the wine and extras and it was around $25.

We followed the recipe to a T, looking to Trufflehead’s demos for help in grating a lemon and peeling and pressing the garlic clove, and had the chicken and basil mayonnaise prepared in under 30 minutes.

After about 10 minutes broiling, the chicken came out absolutely perfect. My photo doesn’t do it justice, but trust me it was incredible. The lemon, basil,mayonnaise combination was literally one of the best things I’d ever tasted.

One problem we did run into was that we didn’t realize that the sweet potatoes took over an hour to bake, so we ended up throwing a ton of brown sugar on top and eating those for dessert along w/ the fudge rounds.

All in all, I’m calling this meal an epic success. The chicken itself took less than an hour - shopping, prep, baking, and eating included, it tasted like heaven, and we had leftovers for the next day, which means we ate like kings for about $10 a person.

So cheers to a great start to 2012 - the year a bachelor finally learned how to cook.
